After I tried out this recipe and made such delish banana chocolate chip muffins, I decided to post this. (I also made this with half chocolate chips and half pecans, which was nice too.) I like this recipe because there's not a lot of fat in it, and also, I can't stand beating or making sour milk, which so many banana muffin recipes need...
Preheat the oven to 350F. Grease the muffin tin (12). Into one bowl, put 2 cups of all purpose flour, 1/2 cup brown sugar, 3 tsp baking powder, 1/2 tsp baking soda and 1/2 tsp salt. I sifted this all in, to make sure I had no lumps. As well, I think I used a little less of the sugar too. Stir in 1/2 cup chocolate chips into the flour mixture.
In another bowl, beat together 1 egg, 3/4 cup skim milk, 1/4 cup veg oil, 1-1/2 cups mashed bananas. Add this liquid mixture to the dry mixture, and stir...but only until it is just mixed. Don't over work it. Spoon into the muffin tin, and bake for 22 minutes. (Maybe your oven is a little different than mine, but 22 minutes was just perfect for me. Just make sure if you insert a clean and dry toothpick, or butter knife, it comes out without batter on it.)
Enjoy. And don't eat all 12 at one sitting.
